The red color of the seeds comes from the flesh of the very ripe hip. The mature seeds are typically light tan until the hip reaches the stage of full ripeness. As the flesh degrades it releases it's dense coloration in a juice which is absorbed by the seeds. The juice of the hips is similar to that of very dark cherries and mullberries, though not sweet.
