I am doing a project on the new dawn rose and I would like to know if it is edible...can you eat this beautiful flower?

yes it's partially edible (as all roses). a jam made of rose-petals is very delicious. same is for the fruit. only stems and leaves are not edible.

I planted the Pauls Himalayan Musk rose this year. It has grown rapidly. I wonder when and how I should prune it.

that's simple: as it is a rambling rose, you shouldn't prune it.
